With the greatest care we select the smallest bunches and straggly clusters from the oldest vineyards, from 40 to 90 years old.

Harvested shortly before the traditional picking season, they are placed in shallow ventilated crates with a maximum capacity of four kilograms and then left to raisin for a period of between 20 and 30 days in the drying room, known as the ‘Sulèr’ in dialect.

Drawing on family traditions, which began to make use of the technique of drying grapes in winemaking from the beginning of the last century, the vineyard has developed a strong full-bodied wine which is at the same time elegant and pleasant.
